Southern Jalapeno Stuffed Chicken and Bacon Bites



For this weeks game day recipe we cooked up some jalapeno stuffed chicken and bacon wrapped bites. These are a great snack for kick off and a fun prep while watching games.  We tried to use BBQ sauce in an appetizer this week and these worked out perfectly!  Few ingredients, easy prep, a half hour in the oven, slice, and serve!

Ingredients

  • 5 boneless, skinless, chicken breasts
  • 5 jalapeno peppers
  • 20 strips of bacon
  • 4 oz cream cheese, softened
  • 1 cup grated Colby Jack cheese
  • 1 cup House of Webster Southern BBQ Sauce (or your favorite!)

 Instructions

 1)  Slice chicken breasts in half, making the chicken breast a 1/2 size THINNER.   Put the sliced chicken breasts in between wax paper and pound to about a 1/4 inch thickness.

2)  Slice jalapenos in half length wise.  Remove the inside parts of the jalapenos (seeds, etc.)

3)  In a small bowl, mix softened cream cheese with grated Colby Jack Cheese.

4) Spread a thin layer of cream cheese mixture onto chicken breast.  Place a half of a jalapeno at one end of the chicken breast and roll the jalapeno into a tight roll. 


5) Wrap the roll with 2 slices of bacon.  No need for toothpicks.


6)  Bake at 375 degrees for 30 minutes or until done.  Baste with BBQ sauce  before you put them in the oven and again every ten minutes or so during cooking.  Put the oven on the broil setting for a few minutes after they are done to crisp up the bacon a bit.   Slice and serve!


We sliced up the bites and served with some House of Webster Baby Dill Pickles and some slices of Hot & Sweet Bread and Butter Pickles.  We also served with some of our sliced cheddar cheese and crackers.  It was a delicious game time spread!
