We decided to spice things up for this week's game day recipe. We wanted something quick, easy and absolutely delicious so we cooked up these Black Bean & Corn Bacon Stuffed Jalapenos. These are a quick prep and require only a few ingredients and most importantly they taste GREAT! These will be a hit at any party!
Ingredients
- 2/3 cup (a little less than 1 jar) of House of Webster Black Bean & Corn Salsa
- 5-6 strips of bacon
- 3 Slices of provolone cheese
- 6 Jalapenos
Instructions
1) Cook bacon and set aside. Preheat oven to 425 degrees.2) Chop bacon into small pieces and mix with Black Bean & Corn Salsa in a medium Bowl. Slice jalapenos lengthwise in half and remove seeds and insides.
3) Fill each jalapeno with the Black Bean & Corn and Bacon mixture. Place on a cooking sheet and bake for 10-12 minutes.
4) Once the jalapenos are soft, top with cheese and cook an additional couple of minutes until the cheese starts to brown. Cool and Serve immediately.
